Cinco in the City – The “Official” Fiesta of Dallas

Looking for something fun to do in Dallas this weekend to celebrate Cinco de Mayo? Well you’re in luck because here’s the scoop:

Dos Equis, Red Bull, and ILiveInDallas.com are teaming up with the Infinite Agency to host the most epic Cinco De Mayo party you’ll go to this year! Cinco In the City Block Party – The Official Fiesta of Dallas starts at 2:00 pm Saturday, May 4th, and goes till midnight Sunday, May 5th.

The shindig will go down in none other than the parking lot of the Downtown Dallas El Fenix. The fiesta starts at 2:00pm and the bands go on from 6:00 pm -10:00 pm. Come out, or you’ll be regretting waiting three hours for those “free” margaritas around town. Why wait until the 5th, when you can listen to music, chow down, and drink-up wearing cheap sombreros and fake mustaches a day early? The official sponsor is Dos Equis, which there will be plenty of to drink.

About El Fenix: El Fenix was founded in 1918 by Mike Martinez, El Fenix is known for its brand of Tex-Mex cuisine, and has been a Dallas staple for almost 100 years.

Cedars Food Park Grand Opening Bash

The Grand Opening is Sat 7/28 and I thought it would be fun to get a group together to check it out! Bolsa Mercado Summer Meet & Eat Pop-up Dinners!

Executive Chef Jeff Harris of Bolsa has kept pretty busy this summer. In addition to running the popular Bolsa on Davis St in Oak Cliff, each Friday Night, he’s also been hosting pop-up community-style dinners on the big table that seats 20 inside at Bolsa Mercado next door.

Last Friday evening, that long table hosted a gathering of delightful dinner company. The food and the conversation flowed as nicely as the wine pairings. Next week, and on the last Friday of every month, Chef Harris will feature a vegetarian dinner menu. And with the lovely local ingredients they source, and organic fruits and veggies at their peak of season, a vegetarian dinner at Bolsa Mercado is something even this meat eater would love.

Each dinner is $75/person and includes five or more courses with wine pairings and gratuity included! The menu is announced the Monday before each dinner. To attend call (214) 367-9367 or email contact@bolsadallas.com with your credit card number to reserve your seats.

Mint chocolate chip ice cream is one of my all time favorites. Fresh mint is so refreshing and the dark chocolate crunching with the cool mint is divine. Use fresh mint leaves for the most intense flavor and the best quality dark chocolate for best results. This recipe has a few extra steps, but it’s worth it.
Ingredients
  • 4 Cups Fresh Mint (Rinsed & Drained)
  • 1 Cup Milk
  • 2 Cups Heavy Cream
  • ⅔ Cup Sugar
  • Pinch of Salt
  • 6 Egg Yolks
  • 1 Teaspoon Peppermint Extract
  • 6 Oz Dark Chocolate Chopped

Instructions
  1. Rough chop chocolate, place chopped chocolate in a ziplock bag in put in the freezer.
  2. Put the mint in a heavy saucepan with milk and the cream.
  3. Steep mint over medium heat, do not let boil, remove from heat, cover, and let stand for 30 minutes.
  4. Add sugar and salt, and heat until just steaming again, stirring until all the sugar has completely dissolved.
  5. Remove from heat.
  6. Strain the infused mint mixture into a separate bowl being sure to press well to get all the liquid out of the mint.
  7. Place mixture in medium sized metal bowl into a larger bowl filled with ice to create an ice bath and set aside and allow to cool.
  8. In a separate bowl, whisk the egg yolks.
  9. Slowly add the warm infused mint cream into the egg mixture a little at a time until they are fully incorporated.
  10. Pour the entire mixture back into the saucepan and place over low heat, stirring constantly with a whisk or wooden spoon until custard begins to thicken slightly.
  11. Be careful not to let the mixture boil or the eggs will scramble.
  12. Remove from heat and strain the custard mixture into a bowl to ensure the ice cream will be smooth and creamy.
  13. Allow strained custard to cool to room temperature, then add in peppermint extract.
  14. Place the ice cream base into batch freezer and allow to churn for 45 minutes to one hour.
  15. Mix in chopped chocolate into semi-soft mint ice cream.
  16. Transfer the semi-soft mint ice cream into a freezer safe container and allow to set further if desired.

This recipe is a delightful surprise. Black garlic has a sweetness similar to raisins or prunes. When combined with a good quality local honey in the cream, the depth and subtle sweetness are sublime.
Ingredients
  • 1 1⁄3 Cups Milk
  • 1 1⁄3 Cups Heavy Cream
  • 3⁄4 Cup Local Honey
  • 1 Bulb Black Garlic Cloves (Peeled and Chopped)
  • 1 T Vanilla Extract
  • 1 Egg (Separated)

Instructions
  1. Put milk, cream, and honey into a medium heavy-bottomed saucepan and heat over medium heat, stirring constantly until honey dissolves and mixture is hot, about 5 minutes.
  2. Add black garlic and vanilla then transfer mixture into a large bowl set inside another large bowl, filled with ice stirring occasionally.
  3. Allow mixture to sit until completely cooled.
  4. Put egg white into a clean medium bowl and whisk until soft peaks form.
  5. Whisk egg yolk in a small bowl until pale yellow and thick.
  6. Fold beaten egg white into egg yolk until well mixed then fold egg mixture into chilled milk–honey mixture.
  7. Place the ice cream base into batch freezer and allow to churn for 45 minutes to one hour.
  8. Transfer the semi-soft ice cream into a freezer safe container and allow to set further if desired.

This might sound like a strange flavor, but the flavor is bright, fresh and lovely! Olives are actually a fruit and when in the presence of lemon the citrus notes are heightened. Each bite gives a burst of citrus flavor followed by a the creamy full-mouth feel from the olive oil. The key is to use a high quality lemon-infused extra virgin olive oil such as Olivette.
Ingredients
  • 1 ½ Cups Milk
  • 1 Cup Cream
  • Grated Zest of 1 Lemon
  • 6 Egg Yolks
  • ½ Cup Sugar
  • ⅔ Cup Lemon-Infused Extra Virgin Olive Oil

Instructions
  1. Bring the milk, cream and lemon zest almost to a boil in a saucepan over medium-low heat, stirring often to prevent scorching.
  2. Remove from heat and allow to cool slightly.
  3. Meanwhile, juice the lemon over a glass or ceramic bowl to catch the juices being careful to remove any seeds or pith.
  4. In a separate bowl cream together, egg yolks, sugar and olive oil, lemon juice until bright yellow.
  5. Carefully incorporate the hot cream mixture into the egg mixture a little at a time.
  6. Return to saucepan over medium heat, stirring constantly until the mixture starts to simmer and thicken slightly.
  7. Do not allow the mixture to boil or the eggs will scramble.
  8. Once mixture has thickened, remove from heat and allow to cool to room temperature.
  9. Place the lemon olive oil ice cream base into batch freezer and allow to churn for 45 minutes to one hour.
  10. Transfer the semi-soft ice cream into a freezer safe container and allow to set further if desired.

The intriguing flavor of lavender perfumes this luscious, rich and creamy ice cream. Studded with figs and drizzled with lavender honey this is a delightful dessert.
Ingredients
  • 3 Cups Heavy Cream
  • 1 Cup Milk
  • 1 Vanilla Bean
  • 8 Egg Yolks
  • 1⁄2 Cup Sugar
  • 7 Tablespoons Lavender Honey
  • 8 Dried Figs, Chopped
  • 1-2 Drops lavender Oil
  • Fresh Fruit or Figs, As Needed

Instructions
  1. In a large saucepan, scald cream, milk and vanilla bean. Remove from heat, cover, and infuse flavor for 30 min.
  2. In a large bowl, beat yolks with sugar and honey until sugar has dissolved. Set aside.
  3. Reheat cream to scalding. Pour a small amount of hot cream into yolks, whisking. Return to saucepan; whisk in remaining cream. Cook until mixture thickens. Add figs; chill; freeze in ice cream machine.
  4. Serve ice cream with a drizzle of lavender honey if desired, alongside seasonal fruit salad perfumed with a drop or two of lavender oil.
  5. Place the ice cream base into batch freezer and allow to churn for 45 minutes to one hour.
  6. Transfer the semi-soft ice cream into a freezer safe container and allow to set further if desired.
